Cartoixa is a picture of Scala Dei's landscape. It is the section of the best pieces of their best vineyards. In joining together, the two sides of Priorat, firstly the classic drawing with raspón in cement tanks and aged in large volumes, on the other bordolesa modern development, promoting fruit and extraction. This is a Priorat with that freshness contributed by the altitude of the Scala Dei vineyards.
Varietal: Garnacha Tinta and Cariñena
Appearance: It has a deep to very deep, dense morello cherry red color with violet hues.
Aroma: It has the intense aromas of ripe black fruits, plum plus a touch of violet intermingle with distinct mineral notes from the licorella slate terroir which give it its distinct Priorat typicity. It's aging in barrels gives it spicy aromas such as vanilla, pepper, and toasty notes.
Palate: On the palate, it is robust, buttery, supple with intense mature tannins with full rounded body and a long lingering finish.
Bottle Closure: Cork
Pairing: It is an ideal companion for stews and casseroles, cured cheeses, cured Iberian ham, and other quality cold meats and especially with venison and grilled meats.
Winemakers Tips: This wine is at its optimum consumption time but it can continue to improve at least over the next 7-12 years. If stored under the right conditions.
